Over the centuries, a great mix of international Masters governed the South Indian city of Cochin. First came the Zamorin of Kozhikode (Calicut). Next was the Great Kublai Khan, whom, it is believed, gave the city its name. Later, around 1530, the Portuguese took the city and made it part of their vast and powerful empire. Under their rule, Cochin developed into a prosperous trading center. After the Portuguese came Dutch rule in the mid 17th century, followed by British, and finally, after Indian independence, Indian rule. Following this mix of cultures, it seems fitting that Cochin became famous for another kind of mix, Cochin Masala, a coconut blend ground with red chilies, dal, coriander, and turmeric. We've taken this South Indian kitchen staple and blended it with a high quality, strong black tea, creating a wonderful chai, the national beverage of India. Traditionally, this chai is brewed using milk instead of water. Brewing your tea in the usual fashion and adding warm milk, however, creates the same effect.
